Mashed Parsnips!!!!!
Some primal goodness and a fantastic alternative to mashed potatoes…
Ingredients
- 2 lbs peeled and chopped Parsnips
- 1 1/2 cup Water
- 1 1/2 cup organic Chicken Broth
- Grapeseed Oil or Olive Oil for drizzling
- Trocomare or Salt to taste
Directions
- Peel and chop Parsnips
- Combine Water, Broth and Parsnips in a big pot on the stove
- Bring to a simmer on high heat
- Simmer for 15 – 20 minutes at medium heat
- Take the Parsnips out of the pot leaving out the remaining broth.
- Mash
- Pour 1/4 to 1/2 cup of the remaining broth in the mashed parsnips
- Mash/mix
- Drizzle some oil and sprinkle some salt
- EAT!
