Some primal goodness and a fantastic alternative to mashed potatoes…

Ingredients

  • 2 lbs peeled and chopped Parsnips
  • 1 1/2 cup Water
  • 1 1/2 cup organic Chicken Broth
  • Grapeseed Oil or Olive Oil for drizzling
  • Trocomare or Salt to taste

Directions

  • Peel and chop Parsnips
  • Combine Water, Broth and Parsnips in a big pot on the stove
  • Bring to a simmer on high heat
  • Simmer for 15 – 20 minutes at medium heat
  • Take the Parsnips out of the pot leaving out the remaining broth.
  • Mash
  • Pour 1/4 to 1/2 cup of the remaining broth in the mashed parsnips
  • Mash/mix
  • Drizzle some oil and sprinkle some salt
  • EAT!
