Lemon Poppy Seed Cookies!!!!
- 1 3/4 Blanched Almond Flour
- pinch Celtic Sea Salt
- 2 Tablespoons Grapeseed Oil
- 2 (or 3 or 4) Tablespoons Agave Nectar
- 1 Tablespoon Vanilla Extract
- 1 Tablespoon Packed Lemon Zest
- 1 Tablespoon Poppy Seed
Directions:
- Preheat the oven to 350 F
- Mix the blanched almond flour and salt in a big bowl.
- Mix Grapeseed Oil, Agave Nectar, Vanilla Extract, Lemon Zest.
- Mix the wet and dry ingredients together.
- Work in the Poppy Seeds
- Grease the cookie sheet with Grapeseed Oil
- Put between between a teaspoon and a tablespoon of batter on the cookie sheet and smoosh flat (to about 1/4 an inch).
- Bake for 8-12 minutes until the edges are golden brown
- Let them cool on the cookie sheet for 10 to 20 minutes
- EAT!!!
Leftovers
These are great mild cookies to have on hand as a snack. And they are crazy easy as long as you pick a lemon that is A. actually a lemon and B. not so ripe that the act of zesting it actually juices it.
I made them again a few days later. It took me under 10 minutes to put them together and then I baked them for around 11 minutes (I think). I made them smaller, sweeter (3 1/2 Tablespoons of Agave instead of 2) baked them until they were more golden brown, and they were fantastic. My dad loved them. My mom loved them. My two year old nephew liked them (but I think he would love them more maybe without the poppy seeds) and they were all gone by the end of the day.
Oops-
Again, not sure if that unidentified citrus was actually an orange or perhaps a really really orange lemon, but I couldn’t taste any orange in the cookie, so, ultimately it wasn’t a problem. And I’m choosing to let this mystery go unsolved.
FYI, Where and Why
-Lemon (for zesting)- It takes about one lemon to get to one Tbs of packed lemon zest. But I suggest having two on hand just in case.
