CAULIFLOWER RICE
This is a super simple and satisfying recipe. Perfect for those of you on a primal diet!
Ingredients
- 4 Tbs Olive Oil
- 1 medium diced Onion
- 1 cup (3-ish stalks) finely chopped Celery
- 5 minced cloves Garlic
- 1 head trimmed & coarsely chopped Cauliflower
Directions
- Pour the Olive Oil in the skillet, and turn the heat up to high (to heat the pan).
- Turn the heat down to Medium/Medium-Low.
- Dump the diced onion in the skillet to saute for 15 minutes (until soft and a little brown). Checking on it periodically to make sure that it isn’t burning.
- When the onions get soft and slightly brown (at about 15 minutes) Pour the finely diced celery, minced garlic and salt into the skillet. Let it saute for 5 minutes (until the celery gets soft).
- Don’t forget to stir.
- Put the coarsely chopped Cauliflower into the food processor.
- Pulse until finely chopped.
- Put the Cauliflower into the skillet.
- Stir up in the pan.
- Cover and let it cook for 15 minutes (Checking on it periodically to mix it and make sure that it doesn’t burn).
Leftovers
- This is delicious. I’ve eaten it with two different meals since and it is indeed a great replacement for rice. It doesn’t look exactly like rice, but it will do a “rice” job. (Ohhhh puns.) So, if you’re looking to minimize your grain or have a lighter meal, this is a great alternative. It also doesn’t take long to put together. I highly recommend.
