This is a super simple and satisfying recipe. Perfect for those of you on a primal diet!

Ingredients

  • 4 Tbs Olive Oil
  • 1 medium diced Onion
  • 1 cup (3-ish stalks) finely chopped Celery
  • 5 minced cloves Garlic
  • 1 head trimmed & coarsely chopped Cauliflower

Directions

  • Pour the Olive Oil in the skillet, and turn the heat up to high (to heat the pan).
  • Turn the heat down to Medium/Medium-Low.
  • Dump the diced onion in the skillet to saute for 15 minutes (until soft and a little brown). Checking on it periodically to make sure that it isn’t burning.
  • When the onions get soft and slightly brown (at about 15 minutes) Pour the finely diced celery, minced garlic and salt into the skillet. Let it saute for 5 minutes (until the celery gets soft).
  • Don’t forget to stir.
  • Put the coarsely chopped Cauliflower into the food processor.
  • Pulse until finely chopped.
  • Put the Cauliflower into the skillet.
  • Stir up in the pan.
  • Cover and let it cook for 15 minutes (Checking on it periodically to mix it and make sure that it doesn’t burn).

Leftovers

  • This is delicious.  I’ve eaten it with two different meals since and it is indeed a great replacement for rice.  It doesn’t look exactly like rice, but it will do a “rice” job.  (Ohhhh puns.)  So, if you’re looking to minimize your grain or have a lighter meal, this is a great alternative.  It also doesn’t take long to put together.  I highly recommend.
