I love leftovers
Leftovers are my favorite food group. They are the best part of an expensive meal out. They are the best part of making an entire cake, pie, crisp, soup or chicken.
Because the next day, when I’m feeling lazy, all I have to do is go to the fridge and it’s there, already made, waiting for me. And I can heat it up, I can eat it cold. (Sometimes it’s even better cold and a day old. I love that.)
Leftovers are the extra treat. The bonus round. When the leftovers are good- that’s how you know the ingredients are all excellent quality. You can’t use bad oil and expect the food to keep.
And sometimes (like with soups or chili) it isn’t until a day or two after I make it that the spices and flavors start to blend and meld and really work together to become a cohesive bowl of deliciousness.
I love leftovers.
This is all a long winded way of saying: I’m going to eat some chocolate pie for breakfast. Hmmmm.
