This is a big week for me.

I made some super awesome pancakes, I’m running a half marathon this coming Sunday (eek!) and I’m giving away a copy of The Gluten-free Edge by Peter Bronski and Melissa Mclean Jory, MNT which is a fantastic book and guide for athletes about the benefits of going gluten-free.

But first things first: PANCAKES.

Fluffy Coconut Flour Pancakes
Breakfast

 

These fluffy delicious pancakes are moist, thick, and delicious.
Ingredients
  • 4 eggs
  • 1 cup coconut milk
  • 2 tsp vanilla extract
  • 1 Tbsp maple syrup
  • ½ cup coconut flour
  • 1 tsp baking soda
  • ½ tsp celtic sea salt
  • coconut oil for frying

Instructions
  1. Beat the eggs until frothy
  2. add in the coconut milk, vanilla, and maple syrup. Mix.
  3. in another bowl mix the dry ingredients: the coconut flour, baking soda, and salt.
  4. Combine.
  5. start the frying pan at medium to medium low.
  6. add some coconut oil. Add more as needed.
  7. Scoop a heaping tbsp into the already hot frying pan.
  8. cook for about 2 to 3 minutes on each side (until the pancakes become golden brown)
  9. Cook for a few more minutes.
  10. Put on a plate
  11. Smear with coconut oil
  12. Surround with maple syrup
  13. EAT YOUR HEART OUT

    I am an over checker with my pancakes! I love adding fresh fruit to my pancakes though. Whole blueberries or chopped up strawberries are the best.

    I’m currently getting back into running so I’m training for a simple 5k

  2. I’ve managed to become a wait until there are lots of bubbles that pop before I turn it person. I will be trying this recipe.

      Try it and report back please! I’ve been making them regularly. Dance classes? That sounds like so much fun! I haven’t taken a dance class in two years. I should get back to it. I always loved them. And besides, dance classes sound like a perfect way to train for life. You get stamina, quick feet, coordination and an understanding of rhythm. All things life constantly calls for. :)

    Hi Lillian!

    I guess I’m less of a checker, and more of a watcher. My tell-tale clues are the little bit of drying around the edges, and the bubbles popping on top.. regardless, the first batch of the griddle are always the worst.. I think i don’t wait for the pan to heat up enough!

    As for an event, I am looking forward to running my first marathon in January… so.. training up for that.. can’t wait!

      Growing up my dad would always toss the first batch of pancakes. He’d use too much oil and not let the pan heat up enough, so in the compost they’d go. It was an automatic thing. I never ever realized that you could do it another way until recently. And now bonus, more pancakes!
      You’re running a marathon??? Wow. I’m suuper impressed. And intimidated. Go Jeff, Go!

    i am oh so patient and will not flip till there are a perfect amount of bubbles showing. I make pancakes one day a week and keep in the fridge for fast morning breakfasts.

    I ran my half last month and have a 5k on Saturday and then I plan on taking a break and concentrate on yoga and strength training for a bit.

    My technique is to let my husband make them and the kids and I eat them :) I’ve been told I check too often and don’t let the pan get warm enough first. Patience is not something I have a lot of…. I have just been accepted to ride my bike across Europe next summer to raise awareness to stop sex trafficking/slavery. How crazy cool is that?!! I already subscribe. Thx 4 the great recipes and this giveaway :)

      Wow! Moriah! You’re fit and you’re utilizing your fitness for an amazing cause. I’m impressed! And yeah, patience is hard. I’ve started walking away from the pan for a few minutes just so I can let it get hot enough. If I just stand there I’ll pour the batter too soon and ruin everything. :O

    I am patient when cooking pancakes. I am trying to get back into consistent exercising on my treadmill. It’s not always easy, though.

      In my professional opinion, running is THE WORST until you get back in shape. After that it’s quite enjoyable. I’ve been running out of shape for most of the summer and it’s been terrible. But my last run this week was really lovely. I told my body to do something and then I did it. But I had to torture myself all summer for that feeling. I’m sure it was worth it, but I’m now determined to run regularly just so I don’t have to go through that again. So, good luck getting through that hump!

  8. I wait for bubbles & dry edges, then flip, but only once! Also, I feel like your half-marathon & my relaunch are in the same boat – BIG FREAKNG DEAL to us, but the rest of the world carries on as normal and we’re left panicking and confused. Or maybe that’s just me.

    Pro tip? Put vaseline on your feet before you put on your socks, because it will prevent blisters. Worked like a charm when I ran a marathon. Don’t forget places like in between your toes, because trust me blisters can happen there. Have a great race!

        First off, GOOD LUCK tomorrow. I know how much training is involved with half marathons. You’ll do great.

        Just a quick note that I made these pancakes!!! Oh my. First off, I’m impressed with how closely they looked like “real” pancakes. They were light and fluffy. I really liked the flavor. And my kids gobbled these up! I used a regular pancakes griddle and it worked GREAT (no oil required too). Thanks for sharing such a great recipe. If I don’t win this cookbook I am going to buy it. This recipe is fantastic. :-)

  10. Oh Lillian, pancakes are my weakness. I hate to admit it, but they really are just a syrup delivery vehicle for me. =) I like them floating in pure maple syrup. Oddly enough, I’m a fairly patient flipper because all my pancake recipes use hearty GF flours, so they take longer to cook. I also like them well-browned and crispy.

    As for training, I’ve been getting back (after sitting on my bum for a year writing the book) into my “adventure girl” lifestyle this summer with mountain biking, climbing, and hiking. I entered my first mountain bike race recently and was the 2nd oldest out of 300 women. Yikes! =) I climbed the Grand Teton last month (exhausting) and have a 5 K race coming up in October. I’m not much of a runner, so I’ll be the pokey puppy on that one.

      Oh, you are entered. Just because you wrote the book doesn’t mean you shouldn’t win! (just kidding. You are not entered)
      You are not alone, pancakes are the best syrup delivery system. So efficient and delicious.
      I am not a fast runner either. I’m actually keeping my expectations as low as possible in this one. As long as I finish, don’t puke, or give up in complete passive resistance and lay down on the concrete, I will consider it and myself a success. I don’t care what my time is.

    This recipe looks great! We make pancakes 2-3 times per week using you GF flour recipe (Brown rice flour, potato starch, tapioca), 1 egg, almond milk, banana and a few other ingredients. Sometimes we add frozen blueberries or for a special treat for my daughter – chocolate chips! I like to add organic hemp hearts to mine!

    I am not an over checker but sometimes I flip the first one too soon! We have a cast iron griddle that goes on the stovetop so it can be a challenge to get the perfect temperature.

    In the last 12 months I ran 3 marathons and a half marathon. I took the summer off and am just starting to think about what my next race will be!

      I’ve never seen hemp hearts. I’ll have to google them. They sound… intriguing. :)
      I love cast iron, but it’s true, the slow build of heat does make it a little challenging. Timing has to change as you go. But I kind of like the challenge.

    I am training to be a healthy person in the game of life. It’s kind of grueling. So sometimes I reward myself with pancakes.

    I am patient when it comes to pancakes because patience in the world of pancakes means perfection. You have to wait until the griddle is properly heated, then you wait until bubbles appear and the edges go dull, then –finally!!! –flip ‘em!

      I didn’t! But I’m finding that I like it when I’m not in terrible physical shape. So, it’s starting to be kind of enjoyable. Which is really… surprising. :)

    1) Cool as a cucumber. Keep the skillet heat nice and low, and wait for the edges to show they’re ready.

    I haven’t tried this on pancakes, but adding Cherry Soda Water to waffle mix make heaven in your mouth.

    Oh you know me, I’m a proud practitioner of the Sarah Luckey diet. What am I not training for? Ultimate for sure. I’m also going to start a pretty serious weightlifting routine in the winter. If I’m going to gain weight and stay in-doors, I might as well add some beef to my (pan)cake. Yes, I went there.

    Good luck on your first half! They are the best challenge. My advice is “run the mile you’re in!” as far as pancakes…I haven’t made any since going gf, but after this post I think that will have to change! I will likely be an over-checker :) I’m running the Ragbar Relay tomorrow, a relay with 12 people over 200 miles from SF to Napa! Recovery pancakes for sure :) And I subscribe. Rock your race!!

    I am a patient pancake maker…patience brings perfect pancakes, lol. I am not training for anything at the moment. I am celiac and I have Non-Hodgkins Lynphoma, so my goal at the moment is to be healthy and strong and to stay somewhat active during treatment and beyond. Being gluten free as well as not having dairy, eggs and soy (due to allergies) is actually the best way to help deal with what I am going through.

    I am cool as a cucumber. But I always burn the last ones. Yep, I know everyone else burns the first one…not me, gotta be different. I can’t wait to try this, I love cocnut and I love (and miss!) pancakes.

    I am training for LIFE. After being mis-diagnosed with Crohn’s disease, refusing to live on meds forever and researching everything I could find on any gastro subject I diagnosed myself with celiacs disease. Guess what? I was RIGHT. Thanks doc. Anyhoo… now that I’ve been GF and feeling in control I am ready to start losing weight and training to be the best, healthiest me I can for my 3 kids. It’ll be a long journey but someday I really hope to run. Not even that far, just run a little, maybe a block or two. That’d be cool.

    I’m a constant pancake patter- my step dad always tells me not to do it, but I can’t help it! My pancake flipping skills often end up with broken pancakes. Still learning how to be the perfect pancake maker! My secret for pancakes is cinnamon. I think it goes well with everything :)

    I cook my pancakes on a preheated stone cookie sheet in the oven. That way I can make more at one time, they never stick, and I can cook some turkey bacon right next to them! I am currently training to be a healthier me because my husband and I are trying to get pregnant. I’m riding my new bike more, doing yoga, and hiking with our dog. I love it!

    Hi Lillian :)

    I guess I am a bit of both: an over-checker on the first batch (the one with the inevitably misshapen, under or over cooked pancakes which I end up eating myself because I feel guilty throwing them away); cool and waiting for bubbles & done edges on subsequent batches (the pretty & well cooked pancakes I give my family to eat)

    Prior to baby # 1 I was always training for a race (no more marathons though as they are too hard on my knees & too big a time commitment). I actually ran while preggers. Not so with baby #2 as I was always already exhausted from running after a very energetic toddler (I swear he metabolizes everything into caffeine!!!). Once baby girl is old enough to go in the jogger, I hope to start training again :)

    Just signed up for your news letter and shared the coconut pancake recipe with my friends on Facebook (many of them runners and/or gluten intolerant)

    I’m an overchecker *blushes* I know the general rule is to wait until you see bubbles, but you just never know with gluten and egg free recipes… so my first few pancakes of new recipes tend to be artistic failures. But they usually still taste like success :) I’m training for a healthy lifestyle, and contemplating a half-marathon!

    I am either an over-checker or i try to multitask and completely forget them…i have trouble finding a happy medium…but i have totally missed my pancakes…there are NO restaurants that offer a gluten free version where i live and this recipe looks so good and do-able! i can’t wait to try it…maybe i can have my pancakes and eat em’ too. :)

    Hi Lillian- I need to know more about the coconut flour. Does it give food a coconutty flavor? I am not a fan of coconut, but have discovered a coconut oil that I can tolerate. Just wanted to know about the flour.

      Kim,
      Funnily enough I was never a huge fan of coconut flavor either. Although I think I’m liking it more and more now. I don’t think coconut flour tastes very much like coconut. But then I’m really used to it so I might just not notice it anymore. If anything, I’d say that it’s a very mild flavor. The flour also smells sweeter than it tastes (I love the way that it smells). But it is a very mild flour all around. These pancakes are (by themselves) pretty coconut-y (the coconut milk can do that sometimes). So probably don’t make them unless you’re going to smother them in maple syrup/fruit/chocolate/jam. I would get some Bob’s Red Mill from your local health store and make a vanilla cake. Check out my raspberry cupcakes and make it into a sheet cake and see what you think (you can also free free to omit the raspberries. I like to make that cake with a chocolate frosting. The chocolate mouse is my standard go-to for chocolate frosting. Good luck!
