  1. Linda S. says:

I did both. :) Loved the video, love Tom and Ali too. :) My dream brunch is roasted veggies, egg casserole, yummy scones/muffins, fruit, and oj.

  2. Chris says:

Can these be made without eggs?

  3. Chef Mary says:

    Oh Lillian those look wonderful!

Coconut butter + water = perfect coconut milk substitute. Right on! Especially when you don’t need the whole amount that is in a can. But I have found a canned coconut milk that has NO GUMS! http://www.amazon.com/Natural-Value-Coconut-13-5-Ounce-Containers/dp/B000LKVIEG/ref=sr_1_3?ie=UTF8&qid=1367601011&sr=8-3&keywords=coconut+milk BPA free cans, no gums, good product. Hooray!

Also, for measuring muffins, I love to use a disher (ice cream scoop with lever to release easily.) This is the OXO one http://www.oxo.com/p-230-trigger-scoop.aspx# or you can get a variety of sizes at BMS or Restaurant Depot. (To shop at the Depot you need a friend with a card – they only sell to the trade.)

  4. Mary B. says:

Yummy yum yum, these muffins look fantastico!
I am ready for this sweet giveaway (and yes, I am all signed up everywhere LTK!).
My dream brunch is a veggie egg scramble on top of a mixed green salad with avocado and a huge coffee with coconut creamer. These muffins look pretty solid, so I might want them to be invited as well.

    Keep on Rocking, Ms. Lillian!

  5. Britt says:

    Done and done!
Dream brunch? Well, since this is a dream…
French toast with lemon marscapone and fresh blueberries and strawberries; a slice of ham, onion, potato, broccoli, pecorino, and thyme frittata; a croissant with butter and strawberry rhubarb jam; sliced musk melon; sparkling basil lemonade; and espresso macchiato con latte with real sugar.

  6. Arlee says:

I did both! And these look so delicious!!! I would love to try these as a brunch =) Perfect brunch is a sweet potato hash with mexican spices and a yummy green smoothie along with it. Hope I win!

  7. Jeanene says:

    Hi Lillian,

You are so cute! I would love to bake with you sometime! :)
I subscribed to your videos on You Tube.
I am all ready on your mailing list.
My perfect brunch would be a quiche made with cage free eggs, organic spinach, and turkey bacon. Maybe, a little fruit. Definitely, organic coffee.
I would love to win Nourishing Meals!!

    Blessings,
    Jeanene

  8. Christal says:

Both tasks have been completed. :)

My dream brunch… hmmmmmm, i’m loving the almond flour pancakes from my new roots, mmm so good, with shaved chocolate on top and sweet potato home fries and really rich smooth coffee

  9. April says:

Hi! I’ve done both! My dream brunch would be a traditional English tea (though I’d take herbal) with plenty of fresh baked scones and other baked goods and friends and family to share with! Oh and of course a get-out-of-jail free card for calories ;) Haha thanks for the giveaway!

  10. Arthur says:

I’ve done both. The cupcakes look amazing! Hoping I get one of those cookbooks.

  11. Jane says:

I’ve already done the first and second items on your list. These look wonderful and I agree they’re more like a muffin than a cupcake and I love the combo of carrots and coconuts and currants. My dream brunch would be my homemade pizza recipe using rice flour, a lettuce/spinach salad loaded with veggies with raspberry vinegrette and a soothing cup of either coffee or vanilla chai.

  12. Chef Mary says:

I subscribed on YouTube, and I’m on the mailing list.

Perfect brunch. Hmm… Hard to say! So many delicious brunchy foods, I love them all so much. These muffins look great, and are pretty similar to the recipe I mentioned the other day but with a flour swap (mine uses almond, so moist and buttery!) I’m really into that cake right now, so I would absolutely try these muffins for brunch.

Also, banana waffles http://realfoodgourmet.blogspot.com/2013/03/simple-grain-free-waffles.html and some rooibus chai. And someone else to do the cleanup!

  13. I think Natural Value coconut milk is BPA and gum-free, but you’ll want to double check. Making your own is a great idea. I made your coconut pancakes with the coconut butter + hot water, and they were thin but delicious.

My dream brunch…..savory waffles eggs benedict with crispy bacon + some sort of sweet potato deliciousness.

I’m already subscribed to your youtube! Thanks for the awesome giveaway.

    • lillianmedville says:

Natural Value is BPA free and gum-free. It’s also pretty expensive though so I’ve been just making my own. If the pancakes were thin, maybe add more coconut butter to it? I’ve been playing with the amount that feels good. Right now I’m usually adding around 3 tbsp’s to 1 cup of water. I like my coconut milk thick. :)

  14. amanda says:

My dream brunch is gluten free grain free scones, with berries and coconut creme pumpkin creamy tea and a big basket of rasberries i don’t have to share with anyone:-)

    • amanda says:

O and ive been following you and am subscribed just forgot to mention it. My girls 4 and 3 think ur hilarious and fun to watch… it is a big plus that we get to make treats after we watch lol

  15. Dyanne Spease says:

OK I’m subscribed to all. Pick me, pick me. I so need the help. I have just gone grain free because of my thyroid.

  16. ellen says:

    Hi Lillian:
Can’t seem to log in on YouTube to enter the contest. Boy do those muffins/cupcakes look amazing.

My perfect brunch would include savory bread pudding (hmmm, that’s one I need to research), fresh squeezed oj, fresh fruit salad, and a mocha with almond milk. BTW, just loved when your measuring cup didn’t fit in the container. I should have told you when I first suggested dry measuring cups that sometimes you need to start small!! Tee hee hee….

  17. Rebekah says:

Vegies! Vegies rock my world in ANY way they come. Then fruit. Then meat. Then eggs. Then salad. Hmmmm, maybe just food!

  18. Kayla says:

Both done :) I have no idea what my dream brunch is, those cupcakes look good though.

On the elimination diet to figure out what food allergies/sensitivities I have and have found that it has opened my mind to a lot of foods that overwhelmed me before.

  19. Lina says:

My dream brunch is a delicious scramble of eggs, sweet potatoes, and tons of veggies (carrots, onions, peppers, etc.), along with some coconut yogurt topped with fruit and granola!

  20. Lina says:

I’ve done both, and my dream brunch is a delicious scramble of eggs, sweet potatoes, and tons of veggies (carrots, onions, peppers, etc.), along with some coconut yogurt topped with fruit and granola!

  21. Kelly says:

Done and done! :D My dream brunch would have crispy fried potatoes, a large variety of fresh fruits, french toast and a mimosa fountain. However, most of those foods are just memories from the past. I have moved on and am making better choices for myself and family. I will put this cookbook to excellent use! I promise it will be dog eared and much loved.

  22. amaya giauque says:

I did both! My dream brunch is quiche, muffins, salad and mimosas. :0)

  23. Miranda says:

  27. niki says:

I did both….hmmm dream brunch would be a quiche with some sort of almond flour muffins….rhubarb possibly

  28. Sarah says:

Mission accomplished well at least tasks completed. I think once I make those cupcakes the mission will be accomplished!

Anyway my ideal breakfast would be eggs Benedict’s but instead of ham using smoked salmon on a delicious homemade gf English muffin. Served with fresh berries and other fruit on the side.

    Sarah

  29. Lisa Bondy says:

I am subscribed all over the place & now it looks like I’ll be watching your youTUBE videos for the rest of the day;) Thanks so much for this awesome resource & I’m happy to have found you. My dream brunch…hmmmm…I think it would be a buffet style (since I can never eat at these!) with all kinds of sweet goodies like these these cupcakes, fritta style egg muffins with salsa, crepes with wonderful fruit fillings, fruit/herb infused waters, fresh juices & herbal teas. Can you tell I like to eat? Lol. Have a great day:)

  30. Andrea D'Angelo-Risner says:

I did both. Looking forward to winning your cookbook! :) Okay, My Dream Brunch… never-ending heaps of almost beyond crispy bacon, your cupcakes complete w/frosting (obviously, otherwise they’re just muffins!), lemon and cayenne kombachu from a local purveyor, a monolithic pile of paleo pancakes begotten with berries positively oozing with ghee and maple syrup, chocolate anything, egg nog—why wait for the holidays when I can dream it anytime?—smoked salmon souffle, crunchy hashed browns w/no gooey center, sour cream, and chives and bacon (because you can never have too much bacon). I do not have to prepare my dream brunch, it magically appears on the terrace of my oceanfront home surrounded by smiling, non-whiney loved ones who clear the table and wash the dishes for me (hey, I’m dreaming, remember?) My dream brunch wouldn’t be complete unless everyone in the world got to join in because it’d be more fun knowing that no one would go hungry while I had more than enough to share. I don’t wanna wake up and you can’t make me—I’m smelling baaaaacooooooonnnnnn!!!!!

  31. kate t says:

I am subsribed on Youtube, FB, Pinterst, and mailing list. My dream brunch would be carrot cake muffins, fresh squeeze OJ, a cup of yerba mate and my lovely boyfriend. thank you!

I hope to make these muffins tomorrow morning for breakfast. Thanks for the recipe.

  33. amber says:

Hi lovely Lillian. Done and done.

And my ideal brunch…well, the more selection the better. Egg something for sure, chicken & apple sausages, fruit salad, muffins of some sort (blueberry always rock), and cranberry juice or green tea. Brunch rocks!!!

    Thanks for this great giveaway!

    xo,
    –Amber

  34. Lisa says:

I hope all the winners are enjoying their new cookbooks! I just purchased their first book and love the recipes:) Although they would all be even better filmed in Lillian’s kitchen with her crazy cooking antics (which I love). When is a network going to scoop you up to do a cooking show?
