So many things today!

Cupcakes for brunch? YES PLEASE.

These grain-free, nut-free, dairy-free, soy-free, sugar-free, gluten-free cupcakes from Alissa Segersten and Tom Malterre’s newest cookbook ‘Nourishing Meals’ are more like muffins than they are like cupcakes since they are stuffed full of carrots and currants. But don’t let that diminish your excitement. Make these bad boys for BRUNCH.

Carrot Orange Spice Cupcakes w/ Coconut Orange Buttercream Frosting (Paleo, GAPS, Nut-free) + A Giveaway
Tasty gluten-free, grain-free, dairy-free, nut-free, soy-free, and sugar-free carrot orange muffins.
  • 1 cup coconut flour
  • 1 tsp baking soda
  • ¼ tsp celtic sea salt
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp nutmeg
  • 1 cup coconut milk (or 2-3 Tbsp coconut cream blended in 1 cup of water)
  • 6 large organic eggs
  • ⅓ cup honey
  • 2 tsp vanilla extract
  • 2 tsp orange zest
  • 2 cups grated carrots
  • ½ cup currants
  1. preheat the oven to 350 F
  2. place dry ingredients in food processor
  3. pulse to combine
  4. add the wet ingredients
  5. process to combine
  6. add carrots and currants
  7. pulse a few times to combine
  8. scoop batter into a paper lined muffin tin to the top
  9. bake for 35 to 40 minutes
  10. let cool completely
  11. frost
  12. EAT

Lillian's Test Kitchen is an online cooking web series. The recipes in this series are always grain-free, gluten-free, dairy-free, soy-free, and cane sugar-free. The recipes are also all (at this point) paleo. Some are vegan. Some are raw. I use the best ingredients I can find (and afford).     Oh Lillian those look wonderful!

    Coconut butter + water = perfect coconut milk substitute. Right on! Especially when you don’t need the whole amount that is in a can. But I have found a canned coconut milk that has NO GUMS! BPA free cans, no gums, good product. Hooray!

    Also, for measuring muffins, I love to use a disher (ice cream scoop with lever to release easily.) This is the OXO one or you can get a variety of sizes at BMS or Restaurant Depot. (To shop at the Depot you need a friend with a card – they only sell to the trade.)

    I am ready for this sweet giveaway (and yes, I am all signed up everywhere LTK!).
    My dream brunch is a veggie egg scramble on top of a mixed green salad with avocado and a huge coffee with coconut creamer. These muffins look pretty solid, so I might want them to be invited as well.

    Dream brunch? Well, since this is a dream…
    French toast with lemon marscapone and fresh blueberries and strawberries; a slice of ham, onion, potato, broccoli, pecorino, and thyme frittata; a croissant with butter and strawberry rhubarb jam; sliced musk melon; sparkling basil lemonade; and espresso macchiato con latte with real sugar.

    I did both! And these look so delicious!!! I would love to try these as a brunch =) Perfect brunch is a sweet potato hash with mexican spices and a yummy green smoothie along with it. Hope I win!

    Hi! I’ve done both! My dream brunch would be a traditional English tea (though I’d take herbal) with plenty of fresh baked scones and other baked goods and friends and family to share with! Oh and of course a get-out-of-jail free card for calories 😉 Haha thanks for the giveaway!

    I’ve already done the first and second items on your list. These look wonderful and I agree they’re more like a muffin than a cupcake and I love the combo of carrots and coconuts and currants. My dream brunch would be my homemade pizza recipe using rice flour, a lettuce/spinach salad loaded with veggies with raspberry vinegrette and a soothing cup of either coffee or vanilla chai.

    Perfect brunch. Hmm… Hard to say! So many delicious brunchy foods, I love them all so much. These muffins look great, and are pretty similar to the recipe I mentioned the other day but with a flour swap (mine uses almond, so moist and buttery!) I’m really into that cake right now, so I would absolutely try these muffins for brunch.

    Also, banana waffles and some rooibus chai. And someone else to do the cleanup!

  13. I think Natural Value coconut milk is BPA and gum-free, but you’ll want to double check. Making your own is a great idea. I made your coconut pancakes with the coconut butter + hot water, and they were thin but delicious.

    My dream brunch…..savory waffles eggs benedict with crispy bacon + some sort of sweet potato deliciousness.

      Natural Value is BPA free and gum-free. It’s also pretty expensive though so I’ve been just making my own. If the pancakes were thin, maybe add more coconut butter to it? I’ve been playing with the amount that feels good. Right now I’m usually adding around 3 tbsp’s to 1 cup of water. I like my coconut milk thick. 🙂

    Can’t seem to log in on YouTube to enter the contest. Boy do those muffins/cupcakes look amazing.

    My perfect brunch would include savory bread pudding (hmmm, that’s one I need to research), fresh squeezed oj, fresh fruit salad, and a mocha with almond milk. BTW, just loved when your measuring cup didn’t fit in the container. I should have told you when I first suggested dry measuring cups that sometimes you need to start small!! Tee hee hee….

    On the elimination diet to figure out what food allergies/sensitivities I have and have found that it has opened my mind to a lot of foods that overwhelmed me before.

    Done and done! 😀 My dream brunch would have crispy fried potatoes, a large variety of fresh fruits, french toast and a mimosa fountain. However, most of those foods are just memories from the past. I have moved on and am making better choices for myself and family. I will put this cookbook to excellent use! I promise it will be dog eared and much loved.

    Mission accomplished well at least tasks completed. I think once I make those cupcakes the mission will be accomplished!

    Anyway my ideal breakfast would be eggs Benedict’s but instead of ham using smoked salmon on a delicious homemade gf English muffin. Served with fresh berries and other fruit on the side.

Looking forward to winning your cookbook! 🙂 Okay, My Dream Brunch… never-ending heaps of almost beyond crispy bacon, your cupcakes complete w/frosting (obviously, otherwise they’re just muffins!), lemon and cayenne kombachu from a local purveyor, a monolithic pile of paleo pancakes begotten with berries positively oozing with ghee and maple syrup, chocolate anything, egg nog—why wait for the holidays when I can dream it anytime?—smoked salmon souffle, crunchy hashed browns w/no gooey center, sour cream, and chives and bacon (because you can never have too much bacon). I do not have to prepare my dream brunch, it magically appears on the terrace of my oceanfront home surrounded by smiling, non-whiney loved ones who clear the table and wash the dishes for me (hey, I’m dreaming, remember?) My dream brunch wouldn’t be complete unless everyone in the world got to join in because it’d be more fun knowing that no one would go hungry while I had more than enough to share. I don’t wanna wake up and you can’t make me—I’m smelling baaaaacooooooonnnnnn!!!!!
