Irish Soda Bread!
This recipe is from Elana over at elanaspantry.com And it’s a good one.
Ingredients
- 2 3/4 cups Blanched Almond Flour
- 1/4 tsp Celtic Sea Salt
- 1 1/2 tsp Baking Soda
- 1/2 cup Raisins
- 2 Large Eggs
- 2 Tbs Apple Cider Vinegar
- 2 Tbs Agave Nectar
- pinch Caraway Seeds
Directions
- Preheat the oven to 350 degrees F
- Mix together the Blanched Almond Flour, Celtic Sea Salt, Baking Soda and Raisins in one medium bowl.
- Wisk together the Eggs, Apple Cider Vinegar, and Agave Nectar in a small bowl
- Combine the wet into the dry ingredients. (if you let it sit for a moment, the vinegar will react to the baking soda and will froth a little bit. It’s pretty cool)
- Mix well
- Sprinkle with pinch of Caraway Seeds
- Grease a pan with a dab of Grapeseed Oil
- Plop the dough on the pan and mold it into a 8 inch circle that’s about 1 1/2 inch deep
- Using a serrated knife, score a cross into the dough that’s about 1/2 inch deep.
- Bake for 20 minutes at 350 degrees F
- Turn the oven off, but leave the bread in the oven for 10 more minutes
- When it’s been a total of 30 minutes (20 with the oven on, 10 with the oven off) Take the loaf out of the oven and let it cool for 30 minutes.
- Eat!
Leftovers
- It turns out that I don’t like caraway seeds, so I’ve been making this bread without any and I like it better. It wont rise very much, and the texture is more like a fabulous scone than it is a real “bread”. It’s crispy on the outside, moist on the inside, a little rich, and not terribly sweet. I’ve been eating it as a quick snack all week.

You can pre-order it on Amazon right now (it comes out next week). She keeps thing simple. Which I appreciate since I can get overwhelmed if recipes are too complicated. I’d like to say that that’s a hazard of making things for the first time on camera all the time, but I think it’s also that I’m just not terribly detail oriented. Which is nicer way of saying that I’m impatient.
